Easy Maple Roasted Carrots

Ingredients

  • 6 large carrots
  • 1 1/2 tablespoon olive oil
  • 1 1/2 tablespoon maple syrup
  • Sea salt
  • Pinch of cayenne pepper (optional)
  • Rosemary (optional)
  • Parsley (optional)

Directions

  1. Pre-heat oven to 400 degrees F
  2. Slice carrots in half lengthways and place on a large baking sheet
  3. Mix olive oil and maple syrup together in a small bowl, and brush over carrots to coat them

  5. Sprinkle over salt and cayenne and add rosemary sprigs if using
  6. Sprinkle over salt and cayenne
  7. Bake in oven for 25 minutes until carrots are tender, flipping once halfway through
  8. Serve with chopped parsley if desired

Note: Use large carrots so they don’t shrivel up in the oven
